How it is made
The starter came from a jar Amitha carried back from Lyon, fed on stoneground Khapli wheat ever since. The bulk ferment runs overnight in a cool corner of the studio, the shaped loaves retard for eighteen hours, and they go into a screaming-hot Dutch oven at dawn. There is no way to make this faster. That is rather the point.

There is no shelf here and no display case. Doughs are mixed against the orders in the book, proved slowly, and baked the morning they leave — which is why we ask for the days, and why nothing arrives tired.
