Every loaf begins 48 hours before it reaches you. Amitha mixes against the order book, so the soonest we can have this ready for you is Thu, 3 Sept, 2026. This one comes out of the oven on Thursday, Friday & Saturday only.
How it is made
The dough is 82% hydration, which is to say barely a dough at all. It gets folded four times in the tin and then left alone overnight, and the dimples go in wet-handed just before it bakes.

There is no shelf here and no display case. Doughs are mixed against the orders in the book, proved slowly, and baked the morning they leave — which is why we ask for the days, and why nothing arrives tired.
