How it is made
These began as a request from a regular and quietly became the thing people queue for. The tangzhong roux keeps the crumb absurdly soft for two days — though nobody has ever tested that claim.

There is no shelf here and no display case. Doughs are mixed against the orders in the book, proved slowly, and baked the morning they leave — which is why we ask for the days, and why nothing arrives tired.
