How it is made
Amitha's first pastry-school obsession. The batter rests a full night so the baking powder and the cold do their work — that thermal shock in the oven is what lifts the hump. She still refuses to ship them; you come and get them, or they arrive within the hour.

There is no shelf here and no display case. Doughs are mixed against the orders in the book, proved slowly, and baked the morning they leave — which is why we ask for the days, and why nothing arrives tired.
