How it is made
Built for a friend's house party and never retired. The dough carries enough butter to be difficult and enough structure to hold a proper filling — the compromise took eleven test bakes.

There is no shelf here and no display case. Doughs are mixed against the orders in the book, proved slowly, and baked the morning they leave — which is why we ask for the days, and why nothing arrives tired.
