How it is made
Made from the offcuts of the chocolate work — the nibs left over from conching had to go somewhere. Now the shortbread outsells the bar it came from.

There is no shelf here and no display case. Doughs are mixed against the orders in the book, proved slowly, and baked the morning they leave — which is why we ask for the days, and why nothing arrives tired.
