A full day with the starter, the dough, and the fire

At a glance
The long one. You will build a levain, mix and fold a dough through its bulk ferment, shape two loaves, and take a live starter home with instructions for keeping it alive. Lunch happens somewhere in the middle.
Beginners and repeat bakers work side by side. Amitha teaches to both.
Prerequisites — None. Turn up hungry.

The teaching
Reading a starter — float tests are a lie, here is what to look for
Autolyse, bulk ferment, and the four folds that matter
Shaping a boule and a bâtard without deflating the crumb
Cold retard, scoring, and baking in a domestic oven
All of it inside 6 hours, at the pace of the dough rather than the clock. Nothing is demonstrated at you — every stage is worked with your own hands.
Everything is boxed properly before you leave — nothing travels loose.
There is nothing to pay at the studio, and nothing to buy beforehand.
Practicalities
Short version: turn up with closed shoes and an appetite. Everything else is already on the bench.

Doors open fifteen minutes before we start, at 8:45 am. Coffee is on from the moment you arrive.
Pickups are between 10am and 6pm. Ring the bell twice — the mixer is loud.
Allergies and dietary needs go in the booking notes — Amitha plans the bench around them.

Your teacher
Amitha is the founder and the baker at Atelier Marvelle — the same person who mixes the sourdough at five in the morning is the one standing beside you at the bench. Classes are never handed to a stand-in.
She teaches small, corrects gently, and refuses to let a room leave with a recipe they cannot repeat at home. Expect questions back: what oven do you have, how hot is your kitchen at four in the afternoon, what went wrong the last time you tried.
The studio sits in Bengaluru, and the bench holds eight at the very most.
