Butter, layers, and a great deal of waiting

At a glance
The hardest thing taught in this studio. Two sessions across a weekend: détrempe and lock-in on day one, turns, shaping and bake on day two. Small group, cold room, sharp knives.
Demanding, technical, and unhurried. Come with dough under your fingernails.
Prerequisites — Comfortable with basic bread dough. This is not a first class.
Paid in full at checkout. Free cancellation or reschedule up to seven days before — the full policy is further down this page.
This one runs when there are enough hands to fill the bench. Leave your details and Amitha will write to you first — before the date goes public.
The teaching
Détrempe hydration and why a slack dough ruins lamination
Locking in butter at the right plasticity
Three single turns, with rests that cannot be rushed
Shaping, proofing to the wobble, and egg wash
All of it inside 8 hours, at the pace of the dough rather than the clock. Nothing is demonstrated at you — every stage is worked with your own hands.
Everything is boxed properly before you leave — nothing travels loose.
There is nothing to pay at the studio, and nothing to buy beforehand.
Practicalities
Short version: turn up with closed shoes and an appetite. Everything else is already on the bench.
Atelier Marvelle Studio
Indiranagar, Bengaluru 560038
Doors open fifteen minutes before we start, whenever the date lands.
Pickups are between 10am and 6pm. Ring the bell twice — the mixer is loud.
Allergies and dietary needs go in the booking notes — Amitha plans the bench around them.

Your teacher
Amitha is the founder and the baker at Atelier Marvelle — the same person who mixes the sourdough at five in the morning is the one standing beside you at the bench. Classes are never handed to a stand-in.
She teaches small, corrects gently, and refuses to let a room leave with a recipe they cannot repeat at home. Expect questions back: what oven do you have, how hot is your kitchen at four in the afternoon, what went wrong the last time you tried.
The studio sits in Bengaluru, and the bench holds eight at the very most.
